The story

Embark on an extraordinary journey to the heart of Taungurung Country (Heathcote), where nature’s bounty awaits in a delightful medley of fruits. Here, the Mourvèdre grapes luxuriated in a gentle soak for 5 days, while the Syrah and Grenache underwent a meticulous direct press. Each varietal was then carefully fermented in barrel, a testament to the winemaker’s dedication.

Prepare to be enchanted by the result—a captivating creation that dances upon the palate with natural bubbles. Through a delicate touch of residual sugar, these wines come alive, effervescent and vibrant, offering a truly magical experience.

But there’s more to this story. Meet Toby, the charismatic inspiration behind this remarkable wine. A sophisticated boi with a penchant for cheese, he holds a special place in the hearts of his hoomans. His name graces each bottle, a symbol of his well-behaved charm and the joyful moments shared together.

As you savour each sip, relish in the harmonious flavours that unfold. Toby’s spirit, forever intertwined with this sparkling elixir, adds an extra layer of delight and warmth to your glass. Raise it in celebration of the remarkable marriage between nature’s gifts and the artistry of winemaking. Cheers to Toby, and to the unforgettable journey that awaits within each sparkling glass.
